Demi Chef de Partie and Cook commis

In the kitchen brigade, the Demi Chef is the deputy of the Chef de Partie, who is responsible for a particular area. The Demi Chef de Partie represents the "boss" in his absence and in this case also instructs the commises and trainees. The Demi Chef de Partie already has several years of professional experience.

The Commis de Cuisine is the so-called young cook of the kitchen brigade. He is fully involved in the cooking process, he can be active in all areas of the kitchen and may finally specialize in one of them, and then take over himself as a Chef de Partie.
